Why your cake sinks in the middle even when it looks perfectly baked

A cake can look perfectly baked when you take it out of the oven, only to sink in the middle as it cools.
This can be frustrating, especially when the outside looks golden and firm while the centre drops and leaves a noticeable dip.
A sunken cake does not always mean the recipe is completely wrong. In many cases, the problem can come down to how the batter was mixed, how the cake was baked, or when it was removed from the oven.
The oven temperature is too low
One reason a cake can sink is an oven that is not hot enough. The cake may rise as it bakes, but the centre may not become firm enough to hold its shape.
When the cake is removed, the softer centre can collapse as it cools. This can happen even when the top looks done because the outside may cook faster than the middle.
Giving the oven enough time to reach the required temperature can help the cake bake more evenly. Opening the oven door too early can also affect the baking process and cause the cake to lose heat before the centre has set.
Too much raising agent
Another reason is using too much baking powder or baking soda. Raising agents help the batter expand in the oven, but using more than the recipe requires can make the cake rise too quickly.

The cake may look impressive while it is still in the oven because the batter has expanded. However, the structure may not be strong enough to support the cake once the heat is removed.
As the cake cools, the excess air can escape, and the centre can drop. Measuring ingredients carefully is therefore important, especially when using raising agents.
The cake is not fully baked
A third reason is taking the cake out before the centre is fully cooked. The top may appear firm while the inside remains soft and unable to support the rest of the cake.
This is especially common with thicker cakes, where the centre needs more time to cook than the edges. A cake that is removed too early can collapse as the temperature falls.

Checking the centre before removing the cake can help prevent this problem. The cake should have had enough time for the middle to set rather than relying only on its appearance.
A sunken cake can therefore be caused by a low oven temperature, too much raising agent or an underbaked centre. Paying attention to the oven, measuring ingredients carefully and allowing the cake to cook fully can help it keep its shape after baking.
