How to make restaurant-style vegetable fried rice using leftovers
Leftover rice does not have to go to waste. In fact, rice that has been chilled overnight is one of the best ingredients for making delicious vegetable fried rice at home.
The grains stay firm during cooking, giving you the same texture found in many restaurants. With a few fresh vegetables and simple seasonings, you can turn yesterday’s rice into a quick and tasty meal.
Ingredients
You will need:
- 3 cups of cold leftover cooked rice
- 2 tablespoons cooking oil
- 2 cloves garlic, chopped
- 1 small onion, diced
- 1 carrot, diced
- ½ cup green peas
- ½ cup sweet corn
- 1 small green bell pepper, diced
- 2 spring onions, sliced
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil (optional)
- Salt and black pepper to taste
Prepare the vegetables
Wash and chop all the vegetables before you begin cooking. Since fried rice cooks very quickly, having everything ready makes the process much easier. Break up any clumps in the cold rice using a fork or your hands so that each grain separates easily.
Cook everything on high heat
Heat the cooking oil in a large frying pan or wok over medium-high to high heat. Add the chopped garlic and onion, then stir for about one minute until they become fragrant.

Add the carrots first because they take longer to soften. After two minutes, add the peas, sweet corn and green bell pepper. Stir everything together for another two to three minutes until the vegetables are just tender but still slightly crisp.
Add the cold rice to the pan and mix well with the vegetables. Stir continuously so the rice heats evenly and does not stick to the pan.
Pour in the soy sauce and mix until every grain is lightly coated. If you are using sesame oil, drizzle it in at this stage for extra flavour. Taste the rice and season with a little salt and black pepper if needed.
Finally, stir in the sliced spring onions and cook for another minute before removing the pan from the heat.
Serving tips
Serve the vegetable fried rice while it is hot. It pairs well with grilled chicken, beef, fish or eggs, but it is also satisfying on its own as a light meal.

For the best restaurant-style results, avoid using freshly cooked rice. Cold leftover rice has less moisture, allowing the grains to stay separate instead of becoming soft or sticky. This simple trick, together with fresh vegetables and high heat, creates a delicious homemade fried rice that is full of flavour and ready in less than 30 minutes.
