Baking a soft, fluffy, and moist sponge cake at home is easier than many think. Perfect for birthdays, graduations, ceremonies, or simply as a sweet treat, making your own cake is not only satisfying but also a fun way to save money instead of buying expensive store-bought cakes.

With a few simple ingredients, you can create a delicious cake that everyone will enjoy.

Preparing your batter

Start by preheating your oven to 180°C (350°F) if you’re using one. Grease an 8-inch round cake pan with butter and lightly dust it with flour, or line it with parchment paper.

In a large bowl, beat four large eggs with a cup of sugar until the mixture turns pale, thick, and fluffy. Fold in half a cup of softened butter and a teaspoon of vanilla extract gently to keep the batter airy.

In a separate bowl, sift together one cup of all-purpose flour, a teaspoon of baking powder, and a pinch of salt. Gradually fold the dry ingredients into the egg mixture, adding half a cup of milk slowly as you go. Be careful not to overmix, as this can make the cake dense rather than light.

Baking in an oven

Pour the batter into your prepared pan and smooth the surface. Bake for 25–30 minutes, checking for doneness by inserting a toothpick in the centre; it should come out clean.

Once baked, let the cake cool in the pan for ten minutes before transferring it to a wire rack to cool completely. You can serve the cake plain, dusted with powdered sugar, or frosted with your favourite icing.

Making without an oven

If you don’t have an oven, you can still enjoy a moist sponge cake using a stovetop or ajiko method. Pour the batter into a small greased, heatproof bowl or cake tin that fits inside a deep, heavy-bottomed pot.

Add an inch of water to the bottom of the pot and place a trivet or small stand so the cake pan doesn’t touch the water. Cover the pot tightly and cook over low heat for 40–50 minutes. Avoid lifting the lid too often to maintain the steam.

Check with a toothpick; it should come out clean when done. Let the cake cool before removing it from the pan.

Once your cake is ready, you can enjoy it plain, add frosting, fresh fruits, or even chocolate toppings.
