Step-by-step guide to making molten chocolate lava cake

What makes it special is the contrast. A soft, lightly baked cake on the outside and a molten core that spills out instantly, creating a restaurant-style experience right in your kitchen.
This recipe serves four and takes about 25 minutes from start to finish.
Ingredients and preparation
To make it, you will need 100 grams of dark chocolate (preferably 70 per cent cocoa), 100 grams of unsalted butter, 2 whole eggs plus 2 egg yolks, 50 grams of sugar, 50 grams of all-purpose flour, a pinch of salt. For serving, prepare vanilla ice cream or fresh berries.
Preheat your oven to 220°C. Grease your small oven-safe cups generously with butter, then lightly dust with cocoa powder or flour. This helps the cakes release easily once baked. Place them on a baking tray for stability

Break the chocolate into small pieces and mix it with butter in a heat-safe bowl. Melt gently using short microwave bursts or a double boiler until smooth. Stir well and allow it to cool slightly before using.
Making the batter and serving
In a separate bowl, whisk the eggs, egg yolks, and sugar until the mixture becomes pale and slightly thick. This step adds lightness to the cake.
Slowly pour in the melted chocolate mixture while whisking continuously. Add a pinch of salt and vanilla extract if using. Gently fold in the flour until just combined, avoiding overmixing to keep the texture soft.

Divide the batter evenly into the prepared ramekins, filling each about three-quarters full. Bake for 11 to 14 minutes.
The edges should be firm while the centre remains slightly soft. Timing is key; even a minute too long can remove the molten effect.
Let the cakes rest for one minute after baking. Carefully run a knife around the edges and turn them onto a plate. Serve with ice cream or berries.
