Tips to keep natural groundnut butter smooth and easy to spread

But keeping a jar in the kitchen cupboard usually leads to a frustrating problem after a few days: a layer of clear oil floating at the top and a rock-hard lump at the bottom.
This separation happens because natural groundnut paste has no chemical stabilisers. Groundnuts contain natural oils mixed with tiny solid nut particles. When stored at room temperature, warmth causes the lighter oils to break free and rise.
In a 2022 study published in the journal Foods, researchers noted that “oil separation occurs during peanut butter storage, resulting in natural peanut oil rising to the top and a hard layer of solid peanut remaining at the bottom, making the peanut butter less spreadable.”
Trying to mix that hard bottom layer with a spoon often leaves a huge mess and frustrating lumps.
Flip the jar upside down
Fixing this problem does not mean adding extra ingredients or spending ten minutes stirring with a knife. The easiest fix is simply turning the closed jar upside down and letting it sit on its lid.

Gravity does all the heavy lifting. When the container stands on its head, the oil sitting on top must travel back down through the hard nut solids. As the oil slowly seeps through the dense paste, it softens the dry base and restores a smooth, creamy texture naturally.
Leaving the jar upside down overnight before using it gives the paste time to reabsorb the oils evenly. If oil starts gathering at the top again later in the week, turn the container upside down once more.
Keep it out of direct heat
Temperature plays a big role in how quickly the oil separates. Warm room temperatures in many Kenyan kitchens thin out the natural oils, making them rise faster.

Storing your flipped jar in a cool pantry or shaded cupboard away from the stove slows down this process. Placing groundnut paste in the fridge stops oil separation completely, but cold fats harden, making the paste almost impossible to spread on soft morning bread.
Storing it upside down in a shaded spot keeps it soft and ready to use every morning.
