How reheated rice can make you sick and the correct way to store it
By Dan Kauna, August 27, 2026Leaving a pot of cooked rice on the cooker overnight is a common habit in many Kenyan households. Warm rice waiting for the next day’s meal seems harmless, but it remains a leading cause of sudden food poisoning.
The real danger is not the reheating process itself, but how cooked rice is cooled and stored before it reaches your plate again.
Why boiling rice does not kill the danger
Raw rice naturally carries spores of a bacterium named Bacillus cereus. These spores possess tough protective shells that easily survive boiling water.
When cooked rice sits at room temperature, these dormant spores awaken, transform into active bacteria, and multiply rapidly. As they grow, they produce harmful poisons known as emetic toxins.

Reheating contaminated rice kills the live bacteria, but standard cooking temperatures fail to break down the toxins already produced.
A peer-reviewed study indexed on the National Center for Biotechnology Information explains that “the inactivation of preformed cereulide by food processing steps is unlikely to occur.”
Consuming rice containing these heat-resistant toxins can trigger severe nausea, vomiting, and stomach cramps within 1 to 5 hours.
The protocol for storing leftover rice
Preventing food poisoning from rice comes down to controlling temperature. Bacteria multiply fastest when food sits at room temperature.
Leaving cooked rice covered on the kitchen counter overnight provides the perfect environment for toxin production.

To keep your meals safe, cool cooked rice as quickly as possible, ideally within 1 hour of cooking. Spreading the rice thinly onto a shallow tray helps it cool faster.
Once cool, transfer the rice into an airtight container and place it straight into a fridge set at 4 °C or below. Leftover rice should be consumed within 24 hours and reheated only once until it is steaming hot all the way through.
Any cooked rice left sitting at room temperature for more than 2 hours should be thrown away immediately to protect your health.
